Raise your hand if you’ve ever eaten pumpkin pie for breakfast. Be honest! Don’t worry, you’re not alone; tons of pumpkin lovers have had dessert for breakfast, too. If you’re trying to break this habit, or just looking for a new way to get your pumpkin fix, I have you covered. This pumpkin bread has all the flavor you love from pumpkin pie but in bread form, which makes it a perfect breakfast treat, or afternoon snack. This is a nice, dense bread with a spicy, savory flavor that can pair with coffee or a mimosa.

To make the bread, first preheat the oven to 350 degrees and prepare the loaf pan by buttering all the sides and the bottom. This will help prevent the bread from sticking to the pan, so make sure you have a nice thin coat of butter all over. Then melt two sticks of butter in a medium bowl and let it cool for a couple minutes. Once the butter is slightly cooled, add the eggs and pumpkin and whisk them together until thoroughly combined. Next, whisk together all the dry ingredients in a large bowl and pour the pumpkin mixture over the dry ingredients.

Use a hand mixer to beat everything together.

 

Pour the mixture into the prepared pan and pop it in the oven.

If you have extra batter, you can make muffins out of the remainder. The bread will take about 65-75 minutes to cook, while muffins take about 25 minutes. You’ll know it’s ready when a toothpick stuck in the center comes out clean. Let the bread cool for at least 15 minutes, then remove it from the pan. An easy way to do this is to run a knife around the edges of the pan to loosen the bread, then flip it over onto a plate or cooling rack. The pan will still be hot, so be careful! Pumpkin Bread

Servings 12 slices

Ingredients

  • 3 c flour
  • 2 c brown sugar
  • 1 c granulated sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp baking soda
  • .5 tsp baking powder
  • 1 can pumpkin
  • 3 eggs
  • 1 c butter melted

Instructions

  1. Butter bottom and sides of loaf pan

  2. In a large bowl, whisk together flour, brown sugar, granulated sugar, cinnamon, nutmeg. Cloves, baking soda, and baking powder.
  3. In a medium bowl, melt butter and let cool slightly
  4. Add pumpkin and eggs to melted butter and whisk until fully combined
  5. Pour pumpkin mixture into dry ingredients and use hand mixer to beat until fully incorporated
  6. Pour batter into loaf pan

  7. Bake the loaf at 350 for 65 minutes, or until toothpick inserted in center comes out clean
