Well, hello! Thanks for coming by for our second week of strawberry sweets. I hope this heat isn’t getting to you! This week, I have some delightful cream cheese stuffed strawberries for you that are perfect little bites of yumminess for a hot summer day. They require minimal ingredients, tools and time, which are all huge pluses in my book.
So let’s get straight to making them! First, wash and dry the strawberries. Then, cut off the green top of the strawberry and scoop a hole out of the middle. You can either use a sharp knife for this, or you can use a strawberry huller. A strawberry huller is little tool that helps you cut out the green top of the strawberry and remove a little of the center as well. You may need to hollow out the middle with a knife if you want a little more room for the filling. These are great because you can make the center as large or small as you want, depending on how much of the filling you prefer. Once you have the center cut out pat the strawberries dry and blot the center. You really don’t want any extra moisture on these because it makes the filling runny.
Now mix the filling together. Drop 8 oz of cream cheese (one standard size block) into a medium mixing bowl. Then add ½ cup of powdered sugar, 1 teaspoon of vanilla, and 1 teaspoon of lemon juice. Use either a sturdy whisk or a hand mixer to combine everything together until it’s nice and smooth. At this point taste the filling and see if you like it. If there’s a little too much cream cheese for you, add a spoonful or two of powdered sugar to help offset the taste. If you want to taste the lemon a little more, add another teaspoon. Just make sure to blend well so the flavors are uniform throughout.
Once you have the flavor just right, use a small spoon or a pastry bag to fill the strawberries with as much filling as you want. Now enjoy! Try to save some for your friends, but I won’t tell if you eat them all yourself!
Cream Cheese Stuffed Strawberries
- 1 lb strawberries
- 8 oz cream cheese
- ½ c powdered sugar
- 1 tsp vanilla
- 1 tsp lemon juice
- Milk (as needed)
- Wash and dry strawberries
- Mix cream cheese
- Slice tops off strawberries
- Carve a little space out of center- or use corer
- Use spoon or piping bag to fill the strawberries
