I love desserts that seem like they are incredibly complicated but are actually super simple, and this white chocolate bread pudding with chocolate sauce is the perfect example. It’s a decadent dessert that combines creamy custard, sweet bread, and a decadent sauce for  a complex set of textures and taste that seems like it took hours to prepare. In reality, you can do it all in about an hour of hands-on time. Once you’re finished, you are richly rewarded with a delicious dessert that oozes comfort and warmth.

I actually pulled from 2 recipes to make this dessert. The white chocolate bread pudding recipe I used calls for white chocolate sauce, but that’s a little too sweet for my taste. I think a nice semi-sweet chocolate sauce balances the white chocolate nicely. You can make this dessert a little more labor intensive by making your own bread (if so, I highly recommend the challah recipe from Williams-Sonoma- it’s fantastic), but this time I opted for store-bought croissants.

Like I said, making the bread pudding is actually really easy. First, you heat the milk, cream, and sugar until it’s scalding and the sugar is fully dissolved.

Then you mix in the white chocolate chips and let the mixture cool. Once it is cooled somewhat, mix the milk and chocolate mixture into a bowl of room temperature eggs and vanilla. It’s really important here that the milk is warm but not hot and the eggs are room temperature. If not, you risk cooking the eggs, which you really don’t want to do. I have cooked eggs several times when I was in a hurry and the results were…not good. I may have had nightmares about the texture.

Next, you take bread that is either slightly stale or toasted in the oven to dry it out a bit and soak it in the milk/egg/chocolate mixture until the bread absorbs it, about 30 minutes.

It won’t be the most appetizing thing in the world, but the taste more than makes up for it. Then you dump the bread into an 8×8 pan and pop it in the oven until the custard sets.

While the bread pudding cools a little, make the chocolate sauce. This is a combination of milk, cream, cinnamon, and brown sugar, heated to just a boil. You then mix chocolate chips into the hot mixture until they’re completely melted. Once you’re ready to serve, just pour the mixture over the bread pudding.

And just like that, you have a delicious, decadent dessert that will please any crowd!
